Zucchini Noodle Salad with Bocconcini

Ingredients:
1 tub (200g) Tre Stelle® mini mini Bocconcini, drained 1 medium zucchini, cut into spirals 1 pint grape or cherry tomatoes, cut into halves 2 cups fresh basil 1 small clove of garlic Pinch red pepper flakes (optional) ½ cup olive oil 3 tbsp white wine vinegar 1 tsp salt ½ tsp freshly ground black pepper Additional small basil leaves for garnish (optional)
Instructions:
1. Place all ingredients for vinaigrette in blender, whirl until smooth; cover and refrigerate until ready to use 2. In a large bowl add zucchini, tomatoes and Bocconcini cheese 3. Drizzle with about 1/2 of the vinaigrette; toss, taste, and season 4. Garnish with basil leaves (optional)
